I don't think you can. They are either interested or they are not. Maybe if you had a knitting club up and running they might want to come along to see what goes on but until you have something of value to show them there is no practical way to change their minds.
Maybe you could find some new friends who knit to get your club started. You could try advertising, there are free classified websites you could add a listing to, or you could put a note in a local school newsletter.
You might also think about talking to whoever runs your local knitting store as they might know of people who would be interested.
